Mr. Handsome mentioned that it is much easier to start the week when he has something to look forward to on Monday evenings. “How about we plan to have a really good dinner every Monday?” he suggested. We came up with a list of dishes we both love, and Magnificent Meal Monday became a weekly tradition. (It started off as Awesome Meal Monday, but we decided that just didn’t sound right.)
Last week, I prepared homemade Chipotle burritos (recipe coming soon), and tonight I’m making homemade pizza and chocolate pudding. In case you’re curious, here is our list of favorite meals:

Have you ever tried BBQ chicken pizza? Cheddar bacon pizza? What about breakfast pizza (sunny side eggs on top of ham and cheese)? Breaking away from the original cheese and sauce is always tons of fun!

Prepare your pizza crust as usual, then spread a thin layer of bacon grease on instead of sauce and put some minced garlic on it. Then chunks of bacon/ham and chunks of peppers and green onions, top it with mozzarella cheese, then crack whole eggs over top of it and bake!

Sounds like a good idea, but unfortunately my husband and I both hate cooking, so we try to spend as little time in the kitchen as possible. Does Mr. Handsome cook too, or do you do all the cooking, Ellie?

Mr. Handsome is a great cook, and he is always happy to help. But he is usually very tired when he comes home from work, so on weekdays, I do most of the cooking. π

Meatless Mondays has a nice ring to it. I enjoy vegetarian dishes. Growing up, we only ate meat a few times a week, but my husband loves his meat. I'm not sure he would take to Meatless Mondays. π

This is strange that the Lord brought to my mind a verse in the New Testament just before I was to go out to a dinner where there was to be meat served and I am a vegetarian….1Timothy 4:3. So there I took a portion of the meat was sure to say a thank-you as grace first and ate.
