Thank you to those who responded to my desperate plea for chicken recipes! I’ve printed them all and plan to try them over the next several weeks. I made the first one last week, and Mr. Handsome enjoyed it. Granted, he did eat it with ranch dressing, but at least he liked it, right?
The recipe, Baked Chicken Breast found on gimmesomeoven.com, was submitted by Melissa. I added a little extra garlic powder and paprika to offset the pepper, but other than that I followed the directions to a tee.
My picture is not nearly as appetizing as the one on the website, so I’ll just let you visit gimmesomeoven.com. If you try the recipe, let me know what you think and if you come up with any alterations.
In case you were wondering, this is what I wish my chicken had looked like:

This is off subject Ellie but do you play any instruments now? And did you try other instruments in school? I was just wondering. I played Violin in elementary school but did not keep up with it. I've always LOVED Keyboards and wish I had one to play! I am not very good but I love to teach myself since I can't read music.

Hi there! I also learned violin in school, but I'm not very good. I have been trying to learn mandolin, but I haven't played it recently because I am struggling with wrist tendonitis π

I am curious why did you pick this recipe? Their picture looks OK, you should post a picture of your outcome too.

It looks appetizing to me. π I don't think you want to see a picture of mine. It tasted really good, but I wasn't able to get the lighting right.

This recipe looks great! I love the idea of brining the chicken. I brine pork chops and it makes a world of difference, but never thought about brining chicken! Can't wait to try it!

So can you clarify if this is your picture or not? First I thought you were saying we can go to the website to see a prettier picture than yours (which I did click and it was a different pic so I thought the one shown above was yours. But then you said you wished yours had looked like the pic above

Neither of them are my pictures. π

I enjoy your blog Ellie. I really want to ask, do you know of any book, author, pastor, that you have heard a great message regarding "how to be more joyful and appreciative". I've asked God to show me and I know He sometimes works through others so I wondered if you or anyone had ideas on this subject. Thank you.

I do! Douglas MacArthur has one called the secret of contentment. If you have an iPhone you can find it for free in the podcast app by searching "Grace to you."
Blessings,

You asked and got some definite answers on how to make moist chicken. The thing that I like about this recipe you chose to try first is that it is how to keep the moisture in a dry method of roasting chicken. I think it appeals to men's tastes more than moist casseroles, but let us know how Mr Handsome reacts to those too. Congratulations on your successful cooking.

Thank you! π

I was reading a woman's magazine today and saw a recipe for stuffed chicken breasts. I bet that idea is already in the answers to your first question but there are so many responses I don't want to read everyone to check. So maybe it is repetitive but there is an idea that Mr Handsome might find interesting to eat. (PS do you feed him hot chocolate sauce over cold ice cream too?)

Stuffed chicken breast sounds delicious. What is it stuffed with? My husband loves ice cream, but he prefers milkshakes.

The magazine is Woman's World for May 2, 2016. They put caponata, bread crumbs, Italian seasoning and basil and salt n pepper. However if you Google the recipies for this there are lots of other recipies with other ingredients too. (Did you get the slightly sarcastic joke about ice cream with hot sauce? If not look up children's fables. I did not think you would print my comment, 'cause it was sarcastic but maybe you two can joke a bit!)
