My favorite type of Christmas cookie has always been gingerbread. Growing up, I spent many December evenings in the kitchen helping my mom bake and decorate cookies. We made several dozen, saving some for ourselves and passing out the rest to neighbors. I posted my recipes for Old-Fashioned Soft Gingerbread Cookies and Royal Icing last year. (Click here to view.)

Not a cookie but a Christmas-time fave: Chocolate Peanut Butter Meltaway
1 pound milk chocolate wafers
1 pound white wafers
12 ounces creamy peanut butter
Place wafers in a large microwave safe bowl. Heat 3-4 minutes until melted. Stir well until no pieces of wafer remain and there are no streaks of white. Add peanut butter and stir until it is completely melted and blended in. Pour into 8"x8" pan that has been lined with parchment paper. Chill a few hours until firm. This needs to sit out for 30 minutes or so before cutting into small pieces or it will splinter.

These cookies look gorgeous! Did you make and decorate these Ellie? I am just finishing up my Christmas baking. It tends to get eaten before I can put it away! I make bars and squares more than cookies. I bake a mixture of sweet squares and tangy ones. I like the baking more than the eating, but the family enjoys the products. Oreo Truffles! Just crush 1 pkg of Oreos fine. (After I crush them in a bag I dump them in the blender and blend it ultra fine) Mix with 1 block of cream cheese. Roll in balls.(if balls are to sticky to proceed dipping in the chocolate, chill a little) Melt chocolate almond bark and dip Oreo balls till covered. Put on wax paper and let dry. Ummm, these are always looked forward to!

Yes you can keep them in the fridge. Let set out awhile before serving. I have left them out before but they didn't go bad! Maybe my house was cool enough idk. Also you can dip them in the white almond bark too. Very pretty.

Also I use the 1/3 less fat cream cheese. Not quite so rich that way.

My fav are ones my GMA made she called snowball cookies. They are like a butter and chopped pecan cookie rolled in balls baked and then rolled in powder sugar after oven. Sooo good you won't be able to stop at just one!!

My Grandma and Grandpa used to visit our family over Christmas. Our whole family was just so excited for their arrival and cherished every minute while we were with them then. My Grandmother brought a box of assorted dainties she had made at her home. It was precious like silver! On Christmas Eve my mom set them on a crystal platter and we had home made egg nog too. I remember my Grandma said she did not fuss and make very fancy dainties. But the ones she made were special to all our family. She had mince tarts, butter tarts, short bread, coconut chocolate macaroons, Christmas fruit cake, marshmallow square, hello dollies, (are some that I think I remember). It was a long time ago. A way back when practising self-control and politely choosing a single dainty as they were passed around was a challenge! But us kids were proud to try to demonstrate our most civilized behaviours to the group.

I enjoy baking and my family loves the ginger snaps (molasses cookies) dipped in white chocolate and sprinkles on! We also really like Ritz crackers with peanut butter between covered with melted chocolate and sprinkles on. Thanks, Ellie!

We love all kinds of cookies. Our usual favorite is chocolate chip but for Christmas we always make Spritz. My son who will turn 33 on Christmas day still helps me every year. It's our special holiday tradition that we like to do together. I make the dough and then his job is to work the cookie press. Here is the recipe for Spritz:
1 lb. softened butter
2 C. sugar
1 egg
1/4 tsp. salt
4-1/2 C. flour (I usually only use 4 C. as the dough is easier to blend and easier going through the cookie press)
1 tsp. baking powder
1 tsp. vanilla
Bake at 350 for 8-10 min.
We have a Wilton Cookie Pro Ultra II press. Also, we get creative and use green food coloring for the tree shapes, and red which turns out pink for some of the others. Some of the dough we just leave plain.
